1 bag frozen green beans
3 tablespoons extra virgin olive oil
1 large yellow onion, thinly sliced
8 ounces fresh mushrooms
4 tablespoons white whole wheat flour (whole wheat or almond flour will work as well)
1 tablespoon Mrs. Dash Garlic and Herb seasoning 1 teaspoon salt
1/4 teaspoon black pepper
2 1/2 cups low-fat milk
1/4 cup low-sodium chicken stock
1 1/2 cups smashed whole wheat stuffing crumbs
1/2 cup shredded Parmesan
How to Make this Delicious Meal
Preheat oven to 425 degrees. Thaw green beans and toss in 1 tablespoon olive oil and 1 tablespoon Mrs. Dash Garlic and Herb. Spread beans on a non-stick or greased baking sheet. Bake until edges are lightly browned, approximately 20 minutes.
Sauce: While beans are baking, heat 1 tablespoon olive oil in a large skillet over medium heat. Add onions and mushrooms, stirring frequently. Once onions are soft and golden brown, add flour, salt, and pepper. Stir for 1-2 minutes, then add milk. Continue to stir until sauce thickens to desired consistency. Remove from heat.
Finish: Add baked green beans to a 2-quart broiler-safe baking dish, and pour the onion and mushroom sauce over the top. Sprinkle bread crumbs evenly over the surface and drizzle with chicken stock. Top with cheese and bake 10-15 minutes or until bread crumbs begin to brow and cheese is melted. Serve immediately.
