Ingredients:
1/4 cup cooked quinoa
1/2 cup fresh spinach and arugula
2 tbsp crushed walnuts
1 organic fuji apple (chopped)
2 tbsp peanut oil
1 tbsp apple cider vinegar
pinch of cinnamon
pinch of paprika
Salt & Pepper

Instructions:
1. Mix the oil, vinegar, and spices in a small bowl or a cup. Add salt & pepper to taste.
2. Mix the quinoa with walnuts, apple, and greens.
3. Mix in the dressing and toss well.
Wasn’t that easy? The trick is to have a the quinoa already cooked and ready in your fridge so that you can make quick post workout salads and snacks in just a couple minutes.
